All aspects of the process, from salting, filleting, pin boning and slicing are done the traditional way by hand. As a result, a delicate smoky flavour is developed, instantly recognised as the Ludlow Traditional Smokehouse flavour.
The entire process is HACCP approved, with all stages of it logged batch by batch to ensure full traceability.

All our salmon comes from Wester Ross, Scotland’s oldest independent salmon farmer. All their salmon is hand-reared to the RSPCA Freedom Food standard, fed on sustainable fishmeal and is fully traceable. The result is a superb quality fish giving a consistent product.
